With over 34 years in the culinary industry, experience has taught Chef Michael that truly excellent food begins with the freshest and highest quality ingredients. Michael was raised in Metairie, Louisiana eating Cajun Creole food his mother Joyce and grandmother‘s prepared daily. Michael took his love for this cuisine and started working in restaurants by the age of 14.
Michael’s professional culinary background began in 1996 as Executive Chef and owner of Le Petit Chateau Restaurant and Frederic Catering in Slidell, Louisiana. By 2000, Chef Michael moved on to open Frederic’s at the historic Salmen Fritchie House in Slidell, Louisiana. Having the opportunity to have his restaurant on the water, Chef Michael opened Michael’s Restaurant & Catering on Hwy. 11, Slidell, Louisiana.
August 2005, the eye of hurricane Katrina nearly destroyed Southeastern Slidell area taking the majority of Michael’s Restaurant with it. By the grace of God, Michael was up and running within 10 months. Michael’s Restaurant has evolved into a “Four Star Fine Dining Restaurant” quoted by Tom Fitzmorris, New Orleans Food Critic.
Awarded Best Chef ’s of Louisiana 2011 by the American Culinary Federation.
Michael has been participating in several community non-profi t fundraisers for the past 14 years to include the Chef Soire’e, Jazz on the Bayou, LRA Ultimate Dining Experience, and the Gourmet Gala and he is an active member in the Louisiana Restaurant Association. Chef Michael has mentored culinary students from Delgado, Slidell High and Northshore High culinary programs.
When not preparing delicious meals for his patrons, Chef Michael and his wife Courtnye’, enjoy their time on their 23 acre farm in Carriere, Mississippi raising cattle, pygmy goats, chickens, rabbits, hogs, quail, and growing organic vegetables and herbs while enjoying the nice, quiet country life.
Michael’s Restaurant is located at 4820 Pontchartrain Drive ( Hwy 11 at Carr Drive) in Slidell, Louisiana. Michael’s is a relaxed upscale waterfront Bistro, serving contemporary Creole cuisine. Michael’s cocktail lounge is a great place to unwind, with the largest selection of spirits, a wonderful martini menu, and a very extensive wine list. Enjoy fresco dining on our dock, arrive by boat, or just watch the boat’s pass by, and sunset is a nice time to end the evening. On Friday and Saturday nights from 7 to 10 pm the soft sounds of Master Jazz Guitarist Hank Mackie fi lls the dining rooms. Reservations are recommended.
