These moka meals are made from frozen potato flour. Despite its name, the Moka food is a cake-like side dish usually consisting of mashed potatoes and flour, eggs, sugar, and butter. The frozen potato cake I tried out today was also a big surprise. When I started using frozen potatoes back in my college days (for making mashed potatoes or frying them), they were pretty expensive and only came in packs of four bags.
Today’s recipe for (frozen potato cake) is different. To make it, you take a few slices of peeled potatoes, place them in a plastic bag with some salt, close it tightly and freeze them overnight.
The following day, take out the frozen bags and let them thaw for a few minutes before steaming them for 25 minutes. You can also steam them in a pot if you don’t have a steamer.
Once they’re cooked, please turn off the heat and cover the (frozen potato cake) with a blanket or towel to keep it warm while you make the custard. Once the milk has cooled to room temperature, add vanilla extract and eggs (the egg size will depend on how strong your eggs are). Then, beat the mixture until it’s as smooth as possible. In a separate bowl, add the sugar and a pinch of salt. Then, pour the sugar/salt mixture into the egg/milk mixture.
Add in the flour and mix until it’s as smooth as possible. Then, you can either transfer it to a piping bag or spoon it into your food processor to make little balls. You can even knead the cake a bit with your hands or a spoon if you want to make them smaller.
Then pour in the milk and beat until it’s smooth again. Make sure to mix the (frozen potato cake) into the custard and stir until it absorbs all of the milk and sugar. Excess sugar will cause moka foods to be slightly chewy. After preparing your Moka food creams, let them sit for a few minutes before remixing them.
Moka foods are delicious, and they taste like ice cream or custard. Forget the name. Moka food is an excellent side dish that you should try out.
They won’t taste as good if you don’t beat them until they’re as smooth as possible. If you end up with globs of Moka food, or any other bits and pieces, mix them in the custard again until it all glides smoothly.
